Jben

Jben is a traditional Maroccan milk product similar to fresh cheese. It is prepared by allowing raw milk to ferment and coagulate spontanously and then placing the coagulated milk in a cloth at room temperature and draining the whey. Salt is added to jben made in northern Morocco.
