The topic of sensory evaluation looks at the questions of how we perceive food with our senses and how we can test for it in a structured way to evaluate a food product that we developed. This is an important factor in meeting our customers' expectations. Perceiving smell, the feeling we get from biting into food, the taste that might trigger some memories, etc. all these sensory images are connected with our emotions on a deeper level. The success or failure of a food start-up therefore certainly depends on the question is it meets it's target groups taste and expectations.
